Ingredients
- 1 1/2 cups raw whole almonds, toasted then chopped
- 3 quarts water
- 6 cups white or red quinoa
- 2 Tablespoons honey
- 6 Tablespoons fine chopped shallot
- 2 Tablespoons Mild Curry Powder 1 1/2 teaspoons kosher salt
- 3/4 cup fresh lemon juice
- 1/2 teaspoon black pepper
- 3/4 cup extra virgin olive oil
- 3/4 cup dried currant
- 6 each McIntosh apple, cut into 1/8” thick wedges
- 1 1/2 cups loosely packed fresh mint leaves, coarsely chopped
Directions
- Rinse quinoa thoroughly in a fine sieve; drain. Bring water to a boil in a large saucepan that is more wide than tall. (A larger surface area will speed the cooking time and the quinoa will cook more evenly.) Add quinoa; return to a boil. Stir quinoa and reduce heat to a simmer and cook until tender but chewy and all of the liquid has been entirely absorbed. When cooked, fluff quinoa with a fork. Cool quinoa on a full sheet pan(s).
- In a large bowl, whisk honey, shallot, curry powder, salt, lemon juice and pepper. Whisking constantly, add oil in a slow, steady stream until dressing is emulsified. Add cooled quinoa to the bowl with currants, apple, mint and almonds. Toss well to combine.
