Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 cups whole wheat flour
- 1 Tablespoon baking powder
- 1 1/2 teaspoons ginger
- 3/4 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1 cup sugar
- 3/4 cup canola oil
- 1 cup raisins
- 1/2 cup finely chopped crystallized ginger
- 3 egg beaters
- 1/2 cup water
- 1 1/2 cups canned pumpkin
- Pinch of cloves
- Pinch of nutmeg
Directions
Preheat oven to 325 degrees.
In a large bowl combine flour, salt, nutmeg, baking soda, cinnamon, sugar, baking powder, ground ginger, nutmeg and cloves.
Add crystallized ginger and raisins, stir gently to coat.
In another large bowl combine eggs, margarine, water and pumpkin.
Mix wet ingredients into dry.
Portion into paper lined muffin tins.
Bake 20-30 minutes or until tester comes out clean.
