Ingredients
- 5 pounds Portobello mushroom, cubed
- 2 pounds diced onion
- .75 pound red pepper
- .75 pound green pepper
- 1 pound diced tomato in puree, drained
- .0625 pound minced garlic
- .0832 pound Italian seasoning
- .0078 pound kosher salt
- .0078 pound black pepper
- 3 pounds feta cheese, cubed
- .5 pounds olive oil
- 5 pounds whole wheat orzo pasta
Directions
1. Cook pasta according the directions, drain, and set aside.
2. Heat the flat top griddle to 350 degrees and coat lightly with oil.
3. Sauté garlic, onions, diced peppers, tomatoes and mushrooms until tender and add the seasonings.
4. Add the orzo and sauté until hot.
5. Add cheese and mix well. Remove from heat and serve in the appropriate serving container.
