Ingredients
- 1.5 cups olive oil
- 8 pounds center cut chops pork loin
- 3 Tablespoons black pepper
- 5 pound large onion
- 1 cup dried parsley
- .5 cup basil
- 3 cups all-purpose unbleached enriched flour
- 1 ounce dehydrated crushed red pepper
- 450 ounces (4 #10 cans) low sodium diced tomatoes
Directions
1. Thinly slice onions.
2. Cut raw pork loin into 4 ounce slices, dredge in 3 cups flour/salt/pepper blend.
3. Heat oil in braising pan.
4. Cook chops in braising pan until browned and centers read 160 degrees. Remove from braising pan. Layer in shallow 1/2 pans and hold hot.
5. Add onions to braising pan and cook for approximately 4 minutes. Add diced tomatoes with juice, parsley and basil mix and the red pepper flakes.
6. Cover and simmer for approximately 15 minutes. Season with salt and pepper to taste.
7. Remove 1/2 the sauce and puree. Add back to sauce blend to thicken.
8. Once sauce has thickened, spoon over pork chops and serve
