Ingredients
- 4 pounds whole grain rotini pasta
- 2.5 pounds sliced mushroom
- 1.5 pounds sliced red pepper
- 0.0153 pound 25/75 blend olive oil
- 0.0153 pound fresh parsley, chopped
- 0.5 pound water
- 2 pounds hummus
Directions
Cook pasta according the directions, drain, and set aside.
Sauté the mushrooms and peppers in the olive oil for 2 minutes.
In a sauce pan heat the hummus and water. Toss in the pasta and then the vegetables.
Serve in 2 inch half pans and garnish with chopped parsley.
