Ingredients
- 0.0624 pound minced garlic
- 3/4 cup soybean oil
- 10 pounds broccoli florets
- 5 pounds roasted red peppers
- 5 pints water
- 4 ounces low sodium vegetable soup base
- 5 pounds whole grain ziti pasta
Directions
Prepare pasta according to recipe, set aside.
Chop and soften the garlic in the oil over medium heat.
Add the broccoli and cook for 3 minutes. Stir in the roasted peppers and cook for 2 more minutes.
Add the water and base and bring to a boil. Reduce heat and simmer for 3 minutes.
Add the pasta and simmer for 2 more minutes.
Let stand for 5 minutes before service.
Note: Escarole may be substituted for the broccoli.
