Ingredients

  • 180 pounds 1/4" Skin-on Red Potatoes
  • 13 pounds Butter-Flavored Oil
  • 0.4375 pound parsley
  • 0.5625 pound Kosher Salt
  • 0.25 pound paprika
  • 0.125 pound granulated onion
  • 0.125 pound granulated garlic
  • 0.125 pound rosemary
  • 0.125 pound black pepper

Directions

  1. Drain potatoes – reserve.
  2. Melt oleo in a kettle and add all spices except for parsley.
  3. Combine potatoes with melted oleo & spices. Mix to coat well.
  4. CCP: Pan onto sheet pans & bake @ 400 degrees until tender & browned well; and an internal temperature of 145 degrees for 15 seconds.
  5. Pan into 2″ pans and garnish with parsley at time of service.
