Orzo Pasta Salad with Peppers and Olives

Ingredients

  • 1/3 cup olive oil
  • 3 Tablespoons balsamic vinegar
  • 1 teaspoon kosher salt
  • 3/4 teaspoon black pepper, ground
  • 3 1/2 pounds orzo, cooked, chilled
  • 4 1/2 ounces 1/4” diced yellow pepper
  • 4 1/2 ounces 1/4” diced red pepper
  • 2 1/4 ounces black olives, medium, pitted, drained, quartered
  • 6 Tablespoons sliced scallions
  • 1 1/2 Tablespoons chopped fresh parsley

Directions

  1. Note: Do not mix any oil into the orzo pasta after it has been cooked. If the pasta sticks together, rinse under cold water to separate it.
  2. Combine the olive oil, vinegar, salt and pepper to form the dressing. Reserve at a maximum temperature of 41 degrees at all times.
  3. Combine orzo, yellow and red peppers, olives, onion and parsley. Toss to evenly distribute.
  4. Add dressing and mix well. CCP—hold refrigerated at internal temperature of 41 degrees or below for service.
