Mushroom Zucchini Ragout over Polenta

Ingredients

  • 0625 pound extra virgin olive oil
  • .375 pound red onions
  • .004 pound kosher salt
  • .5 pound shiitake mushroom
  • .5 pound sliced mushrooms
  • .5 pound zucchini squash
  • .5 pound summer squash
  • .005 pound peeled garlic
  • .0005 pound italian seasoning
  • .0006 pound black pepper
  • .9375 pound diced tomatoes in puree
  • .0833 pound water
  • 2 pounds water
  • .008 pound kosher salt
  • .4 pound polenta

Directions

1. In tilt skillet over medium heat pour in olive oil until hot then add onion and first amount of salt in recipe, cooking until onions are translucent.

2. Stem shitake mushrooms, then add both sliced mushrooms to skillet and cook until liquid has evaporated off.

3. Add zucchini and squash plus garlic, Italian seasoning and pepper cooking for 2 minutes stirring often.

4. Reduce heat to medium low and add tomatoes with all their liquid plus the first amount water in recipe.

5. Place lid on skillet and simmer for 15 minutes, stirring regularly. Make polenta while ragout is simmering.

To Make Polenta: 

1. Heat 4 cups water to 1 cup polenta in pan or kettle.
2. Add 1 teaspoon salt per 1 cup polenta and 4 cups water.
3. Gradually sprinkle in polenta while whisking continuously
4. Reduce heat to low and cook, whisking frequently for about 15 minutes until grains are no longer crunchy and the texture is smooth and creamy.
