Ingredients
- 2 cups dry black currants
- 1/2cup fresh orange juice
- 3 Tablespoons olive oil
- 1 cup small diced yellow onion
- 3 cups sliced crimini mushrooms
- 2 cups pearl barley (Indian Harvest preferred)
- 6 ounces wheat berries (Indian Harvest preferred)
- 1/2 cup millet (Indian Harvest preferred)
- 1/2 cup wild rice blend (Indian Harvest preferred)
- 1/2 cup brown rice (Indian Harvest preferred)
- 1 1/2 quarts boiling water
- 2 teaspoons kosher salt
- 2 teaspoons ground black pepper 1/2 pound scallions, sliced thin
- 2 cups minced fresh parsley
Directions
Preheat oven to 350 degrees. Bring orange juice to simmer in a non-reactive (stainless) pan. Add currants, remove from heat, cover and let currants hydrate for at least 20 minutes.
In a rondo on the stove, heat oil over medium heat. Add onions and sauté 5 minutes. Add mushrooms and continue cooking another 3-5 minutes.
Add barley, wheat berries, millet, wild rice and brown rice. Stir well to combine ingredients. Cook, stirring frequently for 15 minutes to allow all the grains to get hot.
Transfer hot grains to 4-6” deep full hotel pan and carefully add the boiling water and salt. Stir to combine. Cover pan and bake for 30 minutes.
Remove pilaf from the oven when grains are tender; stir in pepper, scallions, plumped currants with orange juice and parsley.
