Moroccan Couscous Salad

Ingredients

  • 1 fluid ounce canola oil
  • 1/2 pound onion, small dice
  • 2 Tablespoons fresh minced garlic
  • 2 cups water
  • 1 ounce low sodium vegetable base
  • 1 pound couscous
  • 2 fluid ounces extra virgin olive oil
  • 2 fluid ounces fresh lemon juice
  • 1/2 pound cucumber, peeled, seeded, diced
  • 3/4 pound tomatoes, peeled, seeded, diced
  • 1 cup black olives, cut in half
  • 1/4 cup chopped fresh oregano leaves
  • 1 Tablespoon ground cumin
  • 1 teaspoon black pepper, ground
  • 2 cups garbanzo beans, cooked with no added salt or fat, drained

Directions

Heat oil in a pot large enough to cook the couscous over medium high heat. Add onions and garlic and sweat until tender, not brown. Add the water and vegetable base and bring to a boil. Place couscous in a 4” full hotel pan. Pour boiling stock mixture over couscous, stir to combine evenly, cover tightly with plastic and allow to rest for 20 minutes.

 

After 20 minutes, remove plastic and rake couscous with a pair of forks, Chill couscous thoroughly.

 

When couscous is completely cold, transfer it to a large bowl; toss with olive oil, lemon juice, cucumber, tomatoes, olives, oregano, cumin, pepper and garbanzo beans. Serve chilled.
