Mexican Corn Salad

Ingredients

  • 2 tablespoons canola oil
  • 1 ounce peeled shallots minced
  • 2 Tablespoons minced fresh garlic
  • 2 Tablespoons minced, seeded jalapeno pepper
  • 8 ounces tomatoes 5x6 peel, seed, dice
  • 8 ounces tomatillo, husk peeled, small dice
  • 4 pounds lightly roasted fresh corn kernels
  • 8 ounces roasted red bell pepper, small dice
  • 1 1/2 Tablespoons chopped fresh cilantro
  • 3/4 teaspoon kosher salt
  • 14 teaspoons black pepper

Directions

  1. Heat oil in a large sauté pan over medium heat. Add shallots, garlic and jalapeno and sauté over medium heat until shallots are translucent but garlic is not brown. Add tomatoes and tomatillos and cook until tomatillos are a bit tender. Remove mixture from heat and cool.
  2. In a large bowl, combine lightly roasted corn, diced pepper, tomato/tomatillo mixture, jicama, cilantro, salt and pepper and toss gently together to combine. Serve cold.
