Linguine with Roasted Tomatoes and Garlic

Ingredients

  • 12 pounds cherry tomatoes
  • 3/4 cup extra-virgin olive oil, divided
  • 1 Tablespoon kosher salt, divided
  • 1 1/2 teaspoons pepper
  • 1/2 cup garlic, cloves separated, unpeeled (about 1 head)
  • 12 pounds hot cooked linguine (about 24 ounces dry)
  • 1 1/2 cups chopped fresh parsley
  • 3/4 cup chopped fresh basil

Directions

Preheat oven to 450 degrees.

Clean, stem, rinse and dry tomatoes. Combine cherry tomatoes, 1/4 cup oil, 1 teaspoon salt, pepper, and garlic in a large bowl and toss gently to combine. Pour tomato mixture into several hotel pans and bake at 450 degrees for 30 minutes or until garlic is browned, stirring occasionally. (Tomato skins will pop.)

Remove garlic cloves from roasted tomato mixture. Squeeze garlic cloves to extract garlic pulp; mash pulp. Discard skins. Add garlic pulp back into tomato mixture, stirring gently. Combine tomato mixture, remaining oil and salt, pasta, parsley, and basil in a large bowl; toss gently. Serve hot
