Ingredients
- 10 pounds whole grain linguini pasta
- 40 pounds water
- .0625 pound salt
- 2 pounds trans-fat free margarine
- 2 pounds olive oil
- .5 pound shredded parmesan cheese
- .125 pound parsley
- .5 pound diced onion
- .12 pound garlic in oil
- .06 pound Italian seasoning
- .06 pound black pepper
Directions
1. Bring water to a rolling boil, add salt and noodles and stir.
2. Cook noodles for 10-12 minutes to an internal temperature of 145 degrees for 15 seconds.
3. Drain, rinse and shock the pasta in cold water to stop carry over cooking.
4. Thoroughly strain and portion in 2 inch 1/2 insert pans.
5. Heat the olive oil over a medium flame and sweat the onions until translucent.
6. Add the remaining spices and garlic and simmer for 2-3 minutes.
7. Add 6 ounces of the margarine and 4 ounces of cheese to each of the hot pasta pans, toss, garnish with chopped parsley and serve
