Ingredients

  • 12 8-ounce packages tempeh, cut into bite-sized pieces
  • 6 large yellow onion, peeled and sliced thin
  • 3 pounds zucchini, sliced
  • 6 cups small diced red bell pepper
  • 3 cups fresh lemon juice
  • 6 cups fresh orange juice
  • 3/4 cup low sodium soy sauce
  • 3/4 cup toasted sesame seed oil
  • 3/4 cup unseasoned rice vinegar
  • 3/4 teaspoon freshly ground black pepper
  • 3/4 teaspoon crushed red pepper to taste

Directions

Combine all ingredients in a full hotel pan; marinate overnight.

Preheat oven to 400 degrees. Divide ingredients evenly among 2-2″ full hotel pans bake for 30 minutes, stirring occasionally to prevent sticking. Finish by broiling for 5 minutes. Serve with Edamame and Orange Rice Side Dish.
