Ingredients
- 12 8-ounce packages tempeh, cut into bite-sized pieces
- 6 large yellow onion, peeled and sliced thin
- 3 pounds zucchini, sliced
- 6 cups small diced red bell pepper
- 3 cups fresh lemon juice
- 6 cups fresh orange juice
- 3/4 cup low sodium soy sauce
- 3/4 cup toasted sesame seed oil
- 3/4 cup unseasoned rice vinegar
- 3/4 teaspoon freshly ground black pepper
- 3/4 teaspoon crushed red pepper to taste
Directions
Combine all ingredients in a full hotel pan; marinate overnight.
Preheat oven to 400 degrees. Divide ingredients evenly among 2-2″ full hotel pans bake for 30 minutes, stirring occasionally to prevent sticking. Finish by broiling for 5 minutes. Serve with Edamame and Orange Rice Side Dish.
