Honey Wheat Bread

Ingredients

  • 8 pounds water
  • 8.5 pounds bread flour
  • 6 pounds whole wheat flour
  • 0.25 pound kosher salt
  • 1 pound honey
  • 1 pound solid shortening- trans-fat free
  • 0.75 pound grade A milk powder
  • 0.25 pound instant yeast

Directions

Add warm water and milk powder to mixing bowl.

When dissolved add yeast.

When dissolved add honey, shortening, flours and salt.

Mix until dough cleans sides of bowl.

Cover and let rest about 30 minutes.

Scale into 1 1/2 pounds dough balls. Let rest about 10 minutes.

Form into loaves and place in bread pans.

Proof until loaves are about 3/4’s proofed.

Bake at 350 degrees for about 30 minutes.
