Ingredients
- 19.25 pounds canned dark kidney beans
- 10 pounds 90% lean ground beef
- 5 pounds diced onion
- 4 pounds diced green pepper
- .0078 pound kosher salt
- .0035 pound black pepper
- .0078 pound crushed red pepper .0125 pound chili powder
- .05 pound ground cumin
- 6.25 pounds diced tomatoes in puree
- 12.5 pounds tomato puree
- 2.5 pounds chopped green chili
- .25 pound minced garlic
- .25 cup soybean oil
Directions
In a hot steam kettle place oil in the pan when the oil is hot, add the ground beef and cook until the meat has reached an internal temperature of 155 degrees.
In the meantime drain and rinse the kidney beans and reserve for later use.
When the meat is cooked, remove from the pan and drain off the fat. Hold meat to the side until needed.
Add oil to the pan and when it is hot, add the garlic, onion and green pepper. Sauté until onion is translucent and the garlic is fragrant, add the spices.
Add the cooked meat and the kidney beans and sauté until the beans are just heated through.
Add the tomatoes products and stir to combine, cover and let simmer for 30-45 minutes or until the full flavor of the spices is evident. Taste and adjust seasoning.
Pan into 4 1/2 inch pans and serve.
