Garlic Tomato Penne

Ingredients

  • 12.5 pound whole wheat rigatoni penne pasta
  • .24 pound minced garlic
  • .125 pound low sodium roasted vegetable base
  • 7.5 pounds tomatoes
  • 2 pounds diced onion
  • 1 pound shredded parmesan cheese
  • 1 pound olive oil
  • .0156 pound black pepper
  • .0008 pound kosher salt
  • .1875 pound fresh basil

Directions

Cook penne, rinse with cold water, drain thoroughly, pan up and cover.

Saute onions in oil for 2-3 minutes. Add the chopped garlic and cook until onions are soft.

Add the roasted garlic and stir thoroughly. Add the tomatoes and cook only long enough for them to warm. Don’t overcook the tomatoes.

Add salt and pepper to sight.

Re-therm pasta in steamer or hot water for 2 minutes.

Toss pasta with hot mix and fresh basil. Top with angel parmesan cheese.
