Garlic & Herb Veggie Sandwich

Ingredients

  • 1 pound extra firm tofu
  • 0.25 pound minced garlic
  • 0.1875 pound low sodium soy sauce
  • 0.0625 pound basil
  • 0.0625 pound oregano
  • 0.0312 pound dill
  • 0.25 pound shredded carrots
  • 0.25 pound sliced cucumber
  • 0.25 pound sliced thin snow peas
  • 0.0312 pound minced ginger
  • 1 each 24 inch French bread, sliced in half length wise

Directions

Place the tofu, ginger, garlic and tamari soy into the blender and process until smooth. Scrap sides as necessary.

Stir in the fresh herbs, taste and season with salt and white pepper as necessary.

Cover and let sit in the refrigerator overnight.

To Make Sandwich:

Spread the garlic tofu and herb spread on the bottom of the French bread and place sandwich open faced into the brick oven and cook until toasted. Top with the shredded carrots, cucumber slices and the thinly sliced snow peas.

Cut the sandwich into 6 and place in the appropriate serving vessel.
