- 2 pounds onions, diced
- 0.75 pound green pepper, diced
- 0.75 pound red pepper, diced
- 0.75 pound summer squash
- 0.75 pound zucchini squash
- 30 pounds liquid egg white
- 0.0625 pound kosher salt
- 0.015 pound white ground pepper
- 0.0277 pound granulated garlic
- 0.5 pound soybean oil
Directions
Preheat grill to 325 degrees Fahrenheit.
Season the vegetable and roast in a 425 degrees Fahrenheit oven till tender and remove from oven.
Pour 12 cups eggs on 325 degrees Fahrenheit grill greased with phase.
Scramble the eggs till soft then add 3 cups of veggie mix.
Finish scramble till eggs are firm or cook internal to 150 degrees Fahrenheit for 15 seconds.
Serve into 4 inch 1/2 pan.
