Ingredients

  • 7 3/4 cups brown rice
  • 8 teaspoons canola oil
  • 1 cup thin diagonally sliced celery
  • 2 2/3 cups thinly sliced scallions, white and green parts
  • 2 2/3 cups (2X1/2-inch) julienne-cut red bell pepper
  • 2 2/3 cups frozen shelled edamame (green soybeans), thawed
  • 1 1/4 cups dry-roasted cashews, roughly chopped
  • 2/3 cup low sodium teriyaki sauce
  • 2 1/2 teaspoons dark sesame oil
  • 1/3 teaspoon freshly ground black pepper
  • 5 whole small oranges, peeled and sectioned

Directions

Cook rice without added salt or fat.

Heat canola oil in a large commercial wok or rondo over medium-high heat. Add celery, onions, and bell pepper; sauté 1 minute. Stir in cooked rice, edamame, and remaining ingredients. Serve immediately.
