Ingredients
- 3 3/4 cups whole egg substitute, like egg beaters
- 1 1/2 quarts skim milk
- 5 fluid ounces canola oil
- 10 ounces whole wheat flour
- 10 ounces all-purpose flour
- 1 Tablespoon kosher salt
- 1/2 cup loosely packed parsley leaves, chopped
Directions
- Mix liquid ingredients in a bowl and whisk until well blended.
- Add the flours, parsley and salt and mix until smooth
- Let rest a minimum of 30 minutes before using.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
- Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Stack the finished crepes by putting wax paper between each one. Keep covered with a dry cloth until ready to eat.
