Cilantro Rice

Ingredients

  • 1 fluid ounce canola oil
  • 3 ounces 1/4” diced yellow onion
  • 5 ounces 1/4” diced celery
  • 11 ounces uncooked brown rice
  • 5 1/4 Tablespoons fresh lemon juice
  • 1 quart water
  • 1/2 teaspoon dried thyme
  • 1 1/4 teaspoons kosher salt
  • 1/8 teaspoon white pepper
  • 4 teaspoons lemon zest
  • 1/2 cup chopped fresh cilantro

Directions

In a large saucepan or rondo, sauté the onions and celery in the canola oil until tender.

Add the rice, sauté for 2 minutes.

Add the lemon juice, water, thyme, salt, pepper, lemon zest and cilantro. Bring to a boil. Reduce to a simmer and cook for 35-45 minutes or until the rice is tender and the liquid has been absorbed. Hold at a minimum temperature of 140 degrees for service
