Ingredients
- 4 ounces powder garam masala
- 2.5 Tablespoons salt
- 3.75 teaspoons ground turmeric
- 7.5 cups all-purpose bleached enriched wheat- white flour
- 15 pounds uncooked breast meat chicken tenders
- 1.25 cups canola oil
- 8 ounces minced garlic in water
- 5 cups chopped onions
- .5 cups ground ginger
- 384 ounces diced low sodium tomatoes
- 4 cups nonfat or skim evaporated milk
Directions
1. Stir together garam masala, salt and turmeric.
2. Season chicken tenders with 2 tablespoons of the spice mix and dredge tenders in the flour.
3. Heat 3/4 cup oil in a braising pan and brown the tenders. Remove the layer in 2 1/2 inch pan.
4. Add the remaining oil, garlic onion and ginger. Cook for 3 to 5 minutes. Add the remaining spice mixture and flour. Stir to coat the vegetables.
5. Add 4 #10 cans of diced tomatoes with juice. Bring to a simmer. Cook stirring often until thickened, 3 to 5 minutes.
6. Stir in evaporated milk, remove from heat.
7. Lay sauce on top of chicken tenders and finish cooking in oven until internal temperature of chicken is 165 degrees. 8. Garnish with cilantro.
