Chicken Pasta and Vegetable Salad

Ingredients

  • 4 3/4 pounds dry rotini pasta
  • 2 gallons water, boiling
  • 1 1/3 cups fat free Italian dressing
  • 2 Tablespoons minced yellow onions
  • 1/4 teaspoon white pepper
  • 1/2 cup parmesan cheese, grated
  • 3 ounces fine julienned zucchini
  • 3 ounces carrots, sliced 1/8 inch
  • 3 ounces broccoli florets
  • 1 cup quartered mushrooms
  • 1/2 cup quartered cherry tomato
  • 3 ounces fine julienned green bell peppers
  • 12 1/2 ounces chicken meat, white, cooked, diced small

Directions

Cook the pasta in the boiling water. Drain well and rinse under cool water.

Combine the dressing, onion, white pepper and parmesan cheese. Mix well. Set aside.

Separately steam broccoli and carrots in perforated pan in commercial steamer. Cool-reserve.

In a large bowl, combine the pasta, all vegetables, chicken and dressing. Mix well and hold at a maximum temperature of 41 degrees at all times.
