Chicken Edamame Bowl

Ingredients

  • 2 1/2 Tablespoons Canola Oil
  • 2 Tablespoons Ginger
  • 6 Cloves Minced Garlic
  • 4 Pounds Boneless Chicken Breast, Cubed
  • 1 Quart Frozen Edamame
  • 1 Quart Frozen Stir Fry Blend
  • 1/2 Cup Low Sodium Soy Sauce
  • 2 Tablespoons Sesame Oil
  • 1 Teaspoon Cornstarch
  • 2 Cups Green Onions
  • 3 Tablespoons Sesame Seeds
  • 2 Teaspoons Salt
  • 8 Cups Cooked Brown Rice

Directions

  1. Heat oil in a large skillet over medium high heat.
  2. Add ginger, and garlic. Sauté until mixture begins to brown.
  3. Add chicken, and sauté for two minutes.
  4. Add edamame and stir fry mix and sauté for three minutes.
  5. Combine soy sauce, sesame oil, and cornstarch, stirring with a whisk.
  6. Add to pan and cook one minute.
  7. Remove from heat and stir in onions, sesame seeds, and salt.
  8. Serve over rice.
