Chicken Cacciatore over Whole Wheat Spaghetti

Ingredients

  • 15 pounds white fully cooked frozen chicken, diced 1/2 inch
  • 2 Tablespoons black pepper
  • 1 cup olive oil
  • 5 pounds chopped onions
  • 15 bell or sweet red peppers
  • 4 ounces minced garlic
  • 11 cups white wine
  • 2 cups canned capers, drained
  • 1/2 cup oregano
  • 1 cup dried basil leaves
  • 8 pounds whole grain dry spaghetti pasta
  • 28 ounces canned tomato paste
  • 420 ounces diced no salt added canned tomatoes
  • 12 cups low sodium chicken broth

Directions

1. Cook pasta until al dente.

2. Prepare vegetables. Chop onion and red pepper.

3. Heat oil in kettle. Sauté peppers and onions. Add garlic and pepper.

4. Add wine and simmer until reduced by 1/2, approximately 5 minutes.

5. Add tomatoes and their juice, chicken broth, drained capers, oregano and basil.

6. Add chicken to kettle and bring to a simmer.

7. Turn into 4 inch half pan and hold hot.

8. Serve 6 ounces sauce and 4 ounces of pasta.
