Ingredients
- 6 second spray Cooking Spray
- 5 1/4 pounds skinless boneless chicken breast
- 5 1/4 cups uncooked wild rice (18 cups cooked)
- 1 1/2 gallons water
- 5 1/4 cups sliced scallions
- 5 1/4 cups seedless green grapes, halved
- 1 cup chopped pecans, toasted
- 5 Tablespoons orange zest
- 5 1/4 cups fresh orange juice
- 2 cups sherry vinegar
- 1 Tablespoon kosher salt
- 3/4 teaspoon pepper
- 1 1/2 pounds red leaf lettuce, tear off 24 leaves
Directions
Preheat oven to 450 degrees.
Coat 4-12” non-stick sauté pans with cooking spray (1 second each) and heat over medium high heat until hot. Place chicken breasts in hot pans, lightly brown on both sides. Place in 450 degree oven and cook for about 15-20 minutes, until done. When chicken is cooked, remove from oven and chill rapidly to 40 degrees.
While chicken is cooking and cooling, combine wild rice with water in large pot and place on stove. Bring to boil, cover and cook rice until done. This particular rice usually cooks within 20-25 minutes but be sure the rice grains are all open. When cooked, drain any excess water and cool rice rapidly to 40 degrees.
Remove chicken from cooler and slice diagonally into ¼” strips. In a large bowl, combine chicken, rice, green onions, grape halves, and pecans and toss well to combine. Set aside.
In a medium bowl whisk together orange zest, orange juice, sherry vinegar, salt and pepper. Pour over chicken mixture; toss well. Serve salad on 24 lettuce-lined plates.
