Ingredients
- 24 each Chicken Quarters
- 1/2 Teaspoon Ground Bay Leaves
- 1/2 Teaspoon Paprika
- 1/2 Teaspoon Parsley
- 1/4 Cup Oregano
- 1 Tablespoon Rosemary
- 3/4 Teaspoon Thyme
- 2 Teaspoons Chopped Garlic
- 3 Ounces Fresh Red Onions
- 1 1/3 Cups Red Wine Vinegar
- 1/3 Cup Olive Oil
- 1/4 Cup Salad Oil
- 1 1/3 Cups Water
Directions
- Mix together bay leaves, paprika, parsley, oregano, rosemary, thyme, garlic, onions, vinegar, oil, and water.
- Place the chicken in the mixture and marinate overnight.
- Drain the marinade. Place chicken in pan and roast, covered for 30 minutes. Remove cover and roast for 30 more minutes. Insure internal temperature is 165 degrees.
