Ingredients

  • 24 each Chicken Quarters
  • 1/2 Teaspoon Ground Bay Leaves
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Parsley
  • 1/4 Cup Oregano
  • 1 Tablespoon Rosemary
  • 3/4 Teaspoon Thyme
  • 2 Teaspoons Chopped Garlic
  • 3 Ounces Fresh Red Onions
  • 1 1/3 Cups Red Wine Vinegar
  • 1/3 Cup Olive Oil
  • 1/4 Cup Salad Oil
  • 1 1/3 Cups Water

Directions

  1. Mix together bay leaves, paprika, parsley, oregano, rosemary, thyme, garlic, onions, vinegar, oil, and water.
  2. Place the chicken in the mixture and marinate overnight.
  3. Drain the marinade. Place chicken in pan and roast, covered for 30 minutes. Remove cover and roast for 30 more minutes. Insure internal temperature is 165 degrees.
