Carrot-Wheat Berry Salad with Cumin and Raisins

If you prefer cilantro, you could add more cilantro than the parsley by switching the amounts. It’ll taste great either way.

Ingredients

  • 1 1/2 cups uncooked wheat berries (Indian Harvest brand is lightly milled for quicker cooking)
  • 2 quarts water
  • 1 1/2 Tablespoons kosher salt, divided
  • 6 pounds carrots, grated (weigh carrots before grating)
  • 1 1/2 cups fresh lemon juice
  • 2 Tablespoons ground cumin
  • 2 Tablespoons paprika
  • 1/4 teaspoon cayenne
  • 4 teaspoons minced garlic
  • 1 cup golden raisins
  • 1/3 cup extra virgin olive oil
  • 3/4 cup chopped fresh parsley
  • 1/3 cup chopped fresh cilantro

Directions

Place water in medium pot with 2 teaspoons kosher salt and bring to boil. When boiling add wheat berries, reduce heat to simmer and cook for 15-20 minutes. Do not overcook. Remove from heat, drain water and rinse with cold water. Chill.

Combine carrots and wheat berries in a large bowl. Add 1 tablespoon salt, lemon, juice, cumin, paprika, pepper, and garlic. Cover and refrigerate 1 hour or until chilled. Stir in raisins and oil, and toss well to combine. Sprinkle with parsley and cilantro.
