Ingredients

  • 4 1/2 Pounds Boneless Chicken Breast, Cut Into 1” Strips
  • 1 1/2 Teaspoons Salt
  • 3/4 Teaspoon Ground Red Pepper
  • 2 Tablespoons Vegetable Oil
  • 6 Each Medium Sweet Potatoes, Sliced Thin
  • 4 Each Fresh Banana Peppers, Seeded & Chopped
  • 4 1/2 Cups Pineapple Juice
  • 2 Tablespoons Cornstarch
  • 12 Each Unripe Bananas, Sliced 3/4”
  • 12 Cups Cooked Brown Rice

Directions

  1. Sprinkle the chicken with salt and ground red pepper.
  2. In a large skillet cook chicken in hot oil over medium heat for 3 minutes. Add the sweet potato and banana pepper.
  3. Cook and stir for 5 minutes or until potato is tender.
  4. In a mixing bowl stir together pineapple juice and cornstarch. Add juice mixture to chicken mixture in skillet. Cook until juice mixture is bubbly, stirring gently. Add the banana and stir for 2 more minutes.

To serve top the rice with the chicken mixture.
