Cannellini Beans with Broccoli Rabe and Plum Tomatoes

Ingredients

  • 2 pounds beans, cannellini, dry
  • 1 each dried bay leaf
  • 3 sprigs fresh thyme
  • 1 Tablespoon Kosher salt
  • 4 fluid ounces canola oil
  • 2 pounds broccoli rabe, chopped
  • 3 Tablespoons minced fresh garlic
  • 3 ounces extra virgin olive oil
  • 1 pound plum tomatoes, fresh, diced
  • 1 bunch basil, fresh chopped
  • 1/2 cup balsamic vinegar

Directions

Soak beans in water refrigerated, overnight. After soaking, drain beans of the soaking water and discard the water.

Place beans in a stainless pot large enough to cover the beans with fresh cold water by about 2 inches. Bring beans to a boil, reduce heat and simmer. Add by leaf and thyme until beans are cooked and tender. Skim the scum that floats to the top of the cooking liquid. When the beans are 2/3’s cooked, add kosher salt and finish cooking. When beans are finished, drain off the water and discard. Chill beans completely.

In a hot, non-stick skillet, sauté the garlic and broccoli rabe in 4oz oil until the broccoli rabe has wilted. Remove broccoli rabe and chill.

In a medium bowl, combine extra virgin olive oil, tomatoes, herbs and vinegar and whisk to combine.

In a large stainless bowl, combine chilled cannellini beans, broccoli rabe and plum tomato mixture. Serve cold.
