- 114.12 pounds chuck roll buffalo
- 144 ounces diced onion
- 72 ounces diced celery
- 72 ounces diced carrots
- 18 quarts water
- 2.25 pounds no msg low sodium beef base
Directions
1. Place roast on flat top grill set to 350 degrees Fahrenheit. Sear on all sides.
2. Place in a sprayed 4 inch full size pan.
3. In a gallon measurer, measure and combine water and beef base. Pour over roast.
4. Measure and add onion, celery, and carrot.
5. Place in combi-oven set to dry heat at 250 degrees Fahrenheit. Using timer should take around 6 hours. Should be fork tender.
6. When roast is done, use reserve broth and mirepoix to make gravy.
7. Appropriate serving dish: carving station.
8. Garnish: fresh sprig of parsley.
