Brussel Sprouts with Onion and Mushroom

Ingredients

  • 3 1/2 pounds Brussels sprouts, fresh or frozen
  • 1 1/2 Tablespoons olive oil
  • 1 1/2 pounds yellow onions, diced 1/4
  • 1 3/4 pounds mushrooms, fresh sliced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, ground

Directions

Steam Brussels sprouts in a perforated pan for 4 to 5 minutes. Minimum internal temperature should be 140 degrees or above.

Sauté onions and mushrooms in the oil until just tender. Minimum internal temperature should be 140 degrees.

Sprinkle with salt and pepper. Stir in Brussels sprouts. Hold hot (140 degrees or above) for service.
