Broccoli with Lemon Glaze

Ingredients

  • 2 quarts water
  • 1 ounce low sodium vegetable base
  • 1 cup fresh lemon juice
  • 1/4 cup lemon zest
  • 2 Tablespoons chopped fresh ginger
  • 1 teaspoon black pepper
  • 2 1/2 Tablespoons arrowroot
  • 6 pounds broccoli florets

Directions

Combine the water, vegetable base, lemon juice, zest, ginger and pepper in a saucepan. Bring to a boil and reduce to 3 cups.

Dilute the arrowroot in a small amount of water and add to the glaze. Cook until thickened.

Steam broccoli until al dente and top with the glaze. Serve hot.
