Ingredients

  • Vegetable Cooking Spray
  • 1 1/2 pounds peeled, diced and steamed russet potatoes
  • 4 1/2 cups whole egg substitute, like egg beaters
  • 24 each flour tortilla, 6”
  • 12 ounces low fat cheddar cheese, Alpine Lace – shredded

Directions

On a preheated flat top griddle, combine the potatoes and eggbeaters together and sauté in the cooking spray until the eggs are cooked and the internal temperature has reached a minimum of 165 degrees for 15 seconds.

On a separate part of the griddle, warm the tortillas.

Place the cooked egg and potato mixture in the tortilla and top with the 1/2 ounce of low fat cheese.

Roll the taco in a foil sheet and hold at a minimum internal temperature of 140 degrees at all times.
