- 3.75 pounds canned black eyed peas
- .125 pound cilantro
- 1 cup oil olive
- .25 cup 100% lemon juice
- .0325 pound kosher salt
- .0062 pound black pepper
Directions
Peel, seed and dice cucumbers. Place in cooler until needed.
Clean, peel and dice red onion. Place in cooler until needed.
Clean and dice roma tomato. Place in cooler until needed.
Clean, seed and dice jalapeno. Place in cooler until needed.
Drain and rinse black eyed peas. Place in cooler until needed.
Clean, dry and chop cilantro. Place in cooler until needed.
In clean mixing bowl, measure and combine olive oil, lemon juice, salt and pepper. Whisk to incorporate.
Add prepared vegetables. Toss to coat.
Place salad in cooler to reach a temperature below 40 Fahrenheit.
Place in appropriate container with garnish for services.
