Ingredients
- 2 pounds medium beets, peeled and diced medium
- 1 pound medium carrots, peeled and diced medium
- 1 pound parsnips, peeled and diced medium
- 1 pound jicama, peeled and julienne
- 1/2 cup canola oil
- 1/4 cup fresh lime juice
- 2 teaspoons fresh lime zest
- 3 teaspoons minced fresh garlic
- 1/4 cup roughly chopped cilantro
- 2 Tablespoons chopped chives
- 1 teaspoon kosher salt
Directions
- In 4 separate perforated hotel pans, steam beets, carrots and parsnips until just tender, drain off any liquid and chill quickly to 40 degrees.
- When vegetables are cooled, combine them with the jicama in a large bowl and toss to combine. In a small bowl, whisk together oil, lime juice and zest, garlic, herbs and salt. Toss the vegetables with the dressing, chili and serve cold.
