Ingredients

  • 12 Pounds Thinly Sliced Top Round
  • 1 1/2 Cups Flour
  • 2 Teaspoons Salt
  • 1 Teaspoon Pepper
  • 1 1/2 Cups Oil
  • 3 Quarts Beef Broth
  • 2 Quarts Dry Vermouth
  • 1 Cup Tomato Paste
  • 1/2 Cup Grated Lemon Peel
  • 3 Pounds Mushrooms, Sliced
  • 4 Pounds 8 Ounces Pearl Onions
  • 48 Lemon Slices
  • 48 Cherry Tomatoes
  • 6 Ounces Green Onions, Sliced
  • 3 Ounces Parsley, Chopped

Directions

  1. Combine flour, salt, and pepper. For each serving, dip 4 ounces beef in seasoned flour to coat. Shake off excess. Sauté beef in oil to brown on both sides. Remove from heat.
  2. Deglaze skillet with 1/4 cup beef broth and 3 teaspoon. Vermouth Stir in 1 teaspoon. Tomato paste, 1/2 teaspoon Lemon peel. Add 1 ounce mushrooms, cook just to heat through. Add 1 1/2 ounces Pearl onions.

Arrange beef slices in pan. Spoon sauce over beef. Garnish with 2 lemon slices and cherry tomato. Sprinkle with onions and parsley.
