Barley with Mushrooms and Chard

This dish would pair nicely with fish or chicken as a full entrée. It was written as an 8oz side dish because it has both the barley and the vegetables in it; a self-contained grain and veggie side dish. If you wanted to serve a smaller 4oz portion, obviously this recipe would produce double the servings.

Ingredients

  • 3 quarts water
  • ½ cup olive oil
  • 1 ½ quarts chopped yellow onion
  • 4 quarts chopped mushrooms
  • 5 cups pearled barley
  • 2 ½ cups dry white wine
  • 7 quarts chopped green chard
  • 2 ½ teaspoons kosher salt
  • 3 Tablespoons minced garlic
  • 2/3 cup chopped fresh parsley
  • 1/3 cup chopped fresh marjoram
  • 1 teaspoon freshly ground black pepper

Directions

Bring water to simmer in medium saucepan and set aside.

Heat oil in a medium saucepan over medium heat. Add onion; cook 8-10 minutes, stirring occasionally. Add mushrooms; cook 5 minutes, stirring occasionally. Stir in barley and white wine and cook until liquid is almost evaporated (about 6 minutes), stirring often. Stir in heated water. Cover, reduce heat, and simmer 40 minutes.

  1.  Add chard, salt and garlic; cook 12 minutes or until chard is tender, stirring often. Add parsley, marjoram and pepper.
