Ingredients
- 3 quarts water
- ½ cup olive oil
- 1 ½ quarts chopped yellow onion
- 4 quarts chopped mushrooms
- 5 cups pearled barley
- 2 ½ cups dry white wine
- 7 quarts chopped green chard
- 2 ½ teaspoons kosher salt
- 3 Tablespoons minced garlic
- 2/3 cup chopped fresh parsley
- 1/3 cup chopped fresh marjoram
- 1 teaspoon freshly ground black pepper
Directions
Bring water to simmer in medium saucepan and set aside.
Heat oil in a medium saucepan over medium heat. Add onion; cook 8-10 minutes, stirring occasionally. Add mushrooms; cook 5 minutes, stirring occasionally. Stir in barley and white wine and cook until liquid is almost evaporated (about 6 minutes), stirring often. Stir in heated water. Cover, reduce heat, and simmer 40 minutes.
- Add chard, salt and garlic; cook 12 minutes or until chard is tender, stirring often. Add parsley, marjoram and pepper.
