Barley Vegetable Casserole

Ingredients

  • 7 cups water
  • .0375 pound low sodium vegetable base
  • .6875 pound pearl barley
  • .25 cup olive oil
  • 1 pound portabella mushroom
  • 2 pounds frozen cauliflower
  • 1 pound julienne onion
  • 3 pounds diced canned tomatoes
  • .5 pound green diced chili pepper
  • .5 pound red pepper
  • .0313 pound basil

Directions

1. In a steam jacket kettle, measure and combine water and vegetarian base. Bring to boil.

2. Measure and add barley. Reduce heat and simmer 10 minutes or until broth is absorbed and barley is tender. Place in warmer.

3. Clean, seed and julienne red peppers. Clean and julienne mushrooms. Place in cooler until needed.

4. In same steam jacket kettle, measure and combine oil, julienned portabella mushrooms, cauliflower and onions. Sauté 10 minutes

5. Measure and add tomato and chilies. Simmer 5 minutes. Add peppers and simmer 2 minutes

6. Add cooked barley and basil. Simmer 2 minutes or until internal temperature reaches 165 Fahrenheit.

7. Place in warmer oven or on steam table.

8. Garnish is basil sprig.
