Banana-Date Flaxseed Bread

This oatmeal is sweetened and flavored with bananas, cinnamon and dates. The flaxseed adds fiber and omega 3 fatty acids.  You can substitute nondairy milk here if you are concerned about lactose or    allergies.

Ingredients

  • 1 cup flaxseeds
  • 3 cups all-purpose flour
  • 1/2 cup flaxseeds
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 1/3 cups mashed ripe banana
  • 1 cup granulated sugar
  • 1/2 cup canola oil
  • 1 cup whole pasteurized eggs
  • 1 cup whole pitted dates, chopped
  • 2 seconds spray canola cooking spray

Directions

Place first mentioned 1 cup flaxseeds in a blender and process until ground to measure 1-1/2 cups flaxseed meal. Set flaxseed meal aside.

Preheat oven to 350 degrees.

Combine flour, flaxseed meal, 1/2 cup flaxseeds, baking powder, baking soda, and salt and set aside.

In electric mixer fitted with paddle attachment, blend banana, sugar, oil, and eggs at medium speed until well-blended. Add dry ingredients to wet ingredients and blend just until combined. Stir in chopped dates.

Spoon the batter into 2- 8 X 4-inch loaf pans coated with cooking spray. (works best in a pan that is not too dark. A dark pan will mean a shorter baking time.) Bake bread at 350 degrees for 45-55 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack, and remove from pan. Cool completely on wire rack.

To serve, cut bread in half, down the center from top to bottom. Then cut 8 even slices from there, creating 16 slices of bread. This proved to be the best way to achieve 16 slices of bread.
