Baked Penne Florentine

Ingredients

  • 2 Pounds Whole Wheat Penne Pasta, Dry
  • 2 1/2 Pounds Frozen Chopped Spinach
  • 1 1/2 Cups Vegetable Broth
  • 4 Each Medium Onion, Chopped
  • 2 Tablespoon Minced Garlic
  • 2 Cups Cashews
  • 1 Quart 3 Cups Water
  • 64 Ounces Navy Beans
  • 2 1/2 Tablespoon Lemon Juice
  • 2 Teaspoon Dry Mustard
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • 2 Cups Whole Wheat Bread Crumbs

Directions

  1. Preheat oven to 375 degrees.
  2. Cook pasta according to package directions. Drain and return to hot pan. Add thawed spinach and toss to combine. Place in steamtable pan.
  3. In a stock pot, combine broth, onion, and garlic. Bring to a boil and reduce heat. Simmer, uncovered for 5 minutes. Remove from heat and set aside.
  4. Place cashews into blender or processor and process until finely ground. Add half of the water and blend until smooth. Add onion mixture, beans, lemon juice, mustard, salt, and pepper. Process until smooth. Transfer to a mixing bowl and stir in remaining water.
  5. Stir bean mixture into pasta mixture. Top with bread crumbs.
  6. Bake, uncovered for 30 minutes.
