Baked Barley with Shiitake Mushrooms and Caramelized Onions Entrée

Ingredients

  • 1/2 cup unsalted butter
  • 4 1/2 quarts chopped onion (about 12 medium)
  • 3 quarts sliced button mushrooms (about 36 ounces)
  • 3 quarts sliced shiitake mushroom caps (about 32 ounces)
  • 6 cups uncooked pearl barley
  • 1/4 cup low-sodium soy sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 Tablespoon Fresh thyme
  • 1 gallon vegetable stock prepared with low sodium vegetable base per manufacturer instructions

Directions

Preheat oven to 350 degrees.

Melt butter in a rondo over medium heat. Add onions and stir to coat with the butter and cook 25 minutes or until golden brown, stirring frequently. Do not allow onions to scorch. If they start to get dark in spots, add a little water. Add mushrooms; cook 10 minutes or until golden brown, stirring frequently. Add barley; cook 2 minutes, stirring frequently. Remove from heat. Stir in soy sauce, salt, pepper, and thyme. Transfer mixture to a 4: deep full hotel pan.

Bring vegetable stock to a boil in a medium saucepan. Pour hot stock over barley mixture. Cover and bake at 350 degrees for 1 hour or until barley is tender. Let stand 10 minutes
