Ingredients
- 4 quarts water
- 2 pounds linguini pasta
- 2 pounds shelled edamame soybean shelled
- 24 ounces shredded carrot
- 1 pound frozen spinach
- .25 pound fresh sliced green onion
- .125 pound whole sesame seed
- .0469 quart olive oil
- .25 quart lite soy sauce
- .5 cup natural rice vinegar
- .5 cup pure sesame seed oil
- .5 cup water
Directions
1. In a steam jacket kettle, bring water to boil. Measure and add pasta, edamame, and carrots. Cook 5 minutes. Drain
2. Return to steam jacket kettle. Measure and combine spinach and onion. Sauté 2 minutes.
3. Combine sesame seeds and olive oil in 2 inch half and pan and toast at 400F degrees. Add to steam jacket kettle. Sauté 2 minutes.
4. In a clean mixing bowl measure and combine soy sauce, vinegar, sesame oil and 1/2 cup water. Add to steam jacket kettle. Sauté 2 minutes or until internal temperature reaches 165 degrees.
5. Place in warming oven or on steam table
