Asian Noodles with Edamame

Ingredients

  • 4 quarts water
  • 2 pounds linguini pasta
  • 2 pounds shelled edamame soybean shelled
  • 24 ounces shredded carrot
  • 1 pound frozen spinach
  • .25 pound fresh sliced green onion
  • .125 pound whole sesame seed
  • .0469 quart olive oil
  • .25 quart lite soy sauce
  • .5 cup natural rice vinegar
  • .5 cup pure sesame seed oil
  • .5 cup water

Directions

1. In a steam jacket kettle, bring water to boil. Measure and add pasta, edamame, and carrots. Cook 5 minutes. Drain

2. Return to steam jacket kettle. Measure and combine spinach and onion. Sauté 2 minutes.

3. Combine sesame seeds and olive oil in 2 inch half and pan and toast at 400F degrees. Add to steam jacket kettle. Sauté 2 minutes.

4. In a clean mixing bowl measure and combine soy sauce, vinegar, sesame oil and 1/2 cup water. Add to steam jacket kettle. Sauté 2 minutes or until internal temperature reaches 165 degrees.
5. Place in warming oven or on steam table
