- 6 1/4 pounds baby spinach leaves
- 5 pounds sliced red onions
- 5 pounds bell or sweet red peppers
- 5 pounds cucumber
- 5 pounds broccoli
- 1 pound slivered almonds
- 7 pounds boneless skinless raw chicken breast
- 4 cups chow mein noodles
Directions
Dice cumber and slice peppers.
Cook chicken to 165 degrees. Once chicken has cooled, slice into strips and place in a deep hotel pan.
Arrange salad vegetables in disposable bowl. Top with 4 ounces sliced chicken breast.
Garnish with sliced almonds and chow mein noodles.
