Asian Chicken Salad

Ingredients

  • 6 1/4 pounds baby spinach leaves
  • 5 pounds sliced red onions
  • 5 pounds bell or sweet red peppers
  • 5 pounds cucumber
  • 5 pounds broccoli
  • 1 pound slivered almonds
  • 7 pounds boneless skinless raw chicken breast
  • 4 cups chow mein noodles

Directions

Dice cumber and slice peppers.

Cook chicken to 165 degrees. Once chicken has cooled, slice into strips and place in a deep hotel pan.

Arrange salad vegetables in disposable bowl. Top with 4 ounces sliced chicken breast.

Garnish with sliced almonds and chow mein noodles.
