Radicchio Ricotta & Apricot Salad

Ingredients

  • 3.75 pounds radicchio
  • 1.5 pounds ricotta salata cheese
  • 0.0937 pound dried fancy apricots
  • 0.75 pound extra virgin olive oil
  • 0.5625 pound rice wine vinegar
  • 0.0019 pound sea salt, coarse

Directions

  1. Take the core out of the radicchio and rip the leaves into bite size pieces. Place into a bowl.
  2. Dice the apricots and crumble the cheese. Set each into separate bowls and reserve for later use.
  3. Mix together the oil, vinegar and the salt. Toss with the lettuce and garnish with the apricots and the cheese. Serve immediately. Do not hold dressed.
