- 40 pounds 90% lean ground turkey meat
- 4.5 pounds rolled oats
- .0625 pound black pepper
- 45 each cage free eggs
- 3.5 pounds diced onion
- .2187 pound ground mustard
- .0625 pound garlic powder
- .0625 pound dried onion
- 3 pounds Heinz chili sauce
Directions
- Blend rolled oats, salt and pepper.
- Add ground turkey. Mix at low speed 5 minutes.
- Add eggs (leaving reserve for 6 ounces on each loaf), ground mustard and onions. Mix thoroughly.
- Fill 2 inch hotel pan with 16 pounds of meat. Pack in thoroughly to remove air pockets. Split the meat down the middle. Consolidate these into two 8 pound loaves, taking time to form them properly.
- Heat up the appropriate amount of Heinz chili sauce. When the meatloaf is done cover each with 9 ounces of sauce.
- Bake at 300 degrees until internal temperature is 155 degrees for 15 seconds.
