Sweet and Sour Veggies with Tofu

Ingredients

  • 4 pounds sliced carrots
  • 4.375 pounds broccoli florets
  • 4.75 pounds zucchini, sliced
  • 0.75 pound celery, diced
  • 0.5 pound olive oil
  • 5 pounds sliced mushrooms
  • 18.75 pounds organic extra firm tofu
  • 0.375 pound lite soy sauce
  • 3 pounds red pepper, sliced
  • 3 pounds tomatoes, diced
  • 4.5 pounds brown rice
  • 0.0312 pound salt
  • 12 pounds water
  • 0.0625 pound soybean oil
  • 0.375 pound sweet and sour sauce

Directions

Place 1 pound 8 ounces of rice into each of three 1/2 pans.

Mix salt, water and oil and pour 1/2 gallon over each pan of rice.

Stir once and cover pan tightly.

Steam at 5 pound pressure for 45 minutes.

In tilting skillet sauté carrots, broccoli, zucchini, celery and red peppers in oil over medium-high heat for 5 minutes.

Add mushrooms, tomatoes, tofu, tamari and sweet and sour sauce. Sauté for 5 minutes more until the internal temperature reaches 145 degrees for 15 seconds.

Serve hot over cooked brown rice.
