Ingredients
- 10 pounds raw 90% ground turkey
- 2/3 cup canola oil
- 5 pounds chopped onions
- 15 sweet or bell green peppers
- 4 ounces minced garlic in water
- 1/2 cup ground cumin
- 1/2 cup chili powder
- 1 cup oregano
- 4 teaspoons ground cinnamon
- 14 pounds boiled pinto beans
- 11 cups low sodium chicken broth
- 15 cups chopped tomatillo
- 1.5 cups dried cilantro leaves
- 8 cups shredded cheddar cheese
- 60 each 10 inch low carb wheat wrap
- 135 fluid ounces el pasado picante sauce
Directions
1. Cook raw turkey in steam kettle, season with salt and pepper. Remove from kettle and drain meat.
2. Add oil to kettle and sauté peppers and onions. Sautee until softened. Add garlic, cumin, chili powder, oregano and cinnamon.
3. Drain pinto beans. Mash and add to vegetable mixture in kettle. Add ground turkey meat, chicken broth and tomatillos. Simmer until thickened. 5-10 minutes. Stir in cilantro.
4. Assemble enchilada: place 1/2 cup turkey mixture down the center of each tortilla and roll. Place in shallow 1/2 pan and top with salsa and cheese. Repeat.
5. Bake in oven until cheese is melted, approximately 10 minutes
